Makdous is a Levantine specialty particularly popular in Jordan, Lebanon and Syria. This mezze of stuffed eggplants with a spicy and garlic taste is preserved in olive oil to be consumed at any time of the year. Makdous is a typical dish of Levantine cuisine, which consists of small eggplants blanched, salted and then stuffed with a mixture of crushed nuts, garlic and chili pepper. The young eggplants are then marinated in olive oil and fermented in a jar. In the Levant, they are most often eaten for breakfast, but also as a mezze for dinner or festive meals. Makdous can also be used as snacks, side dishes for many dishes, as well as fillings for sandwiches and wraps. It is possible to use chili paste or fresh chili, chopped very finely.
