The first Spanish recipes were written in the 14th century and the cuisine was enriched by Moors, Arabs, Sephardic Jews, French and Italians. This resulted, together with voyages to the New World, in a plethora of new ingredients. These things, combined with differences across the country in terms of geography, culture and climate, led to a diverse cuisine that is hard to generalize. Besides well-known dishes such as tortilla de patatas, paella and the legendary Jamon and Serrano, various stews, sausages, cheeses, beans and breads all form a part of the Spanish diet. Spanish desserts include flans, custards, rice puddings, and churros.
