The Pantesca Salad, or Insalata Pantesca, is made with potatoes, tomatoes, olives, capers, onions and oregano. Simple ingredients, with nothing special in appearance. And yet, by putting them together, you get a dish with a deep, Mediterranean and inebriating aroma – provided that excellent, seasonal products are used! The Pantesca salad obviously comes from Pantelleria, a windy island surrounded by rocks and sea, where the cuisine is as simple as everyday life. This simple salad has become one of the symbols of Sicilian gastronomy and it contains all the goodness of Sicily. A few suggestions: use at least two types of tomatoes, because it changes not only the shape but also the taste. Datterini and pachino, camone and piccadilly, San Marzano and perini!
