Micronesian BBQ is found all over the islands. Open flame is a common way for people to cook. Whether it be fish or chicken or pork, it is a delicious way to enjoy BBQ. This marinade is excellent infusing that special island flavor with the use of soy sauce, vinegar, sugar, onions and garlic. You can add some hot chili for a bit of heat or even some orange juice or zest. The possibilities are limitless. We enjoyed the following marinade on chicken pieces and pork ribs, however it work well with just about anything including fish. We marinated the meat overnight but not as much time would be required if using it on fish. Just a couple of hours would do. You can cook the meat or fish over coals, wood, or just a gas grill would be fine too. Please note that recipe does not include marinating time, so plan accordingly.
