There’s nothing quite like a homemade biscuit especially when fresh straight from the oven and these are a family favourite in our house! Albanian Kurabie is just like eating scones, the texture, the smell and the taste is very similar. Traditionally, these cookies are eaten as they are – they don’t get hard and keep for many days. However, we also serve them as an Albanian dessert by soaking them in some sugar water – yum! They come in two flavours plain / vanilla or lemon but I’ve experimented and found that you can add shredded coconut to the mixture to make some coconut versions or sprinkle with icing sugar for a sweeter taste.
