Haitian Blancmange is clearly a French influence for this coconut gelatin dessert. It is super light and refreshing and a great way to balance the palate after all that hot and spicy Haitian food. This dessert is beautiful if you use a pretty mold and decorate it with some fruit. The fruit is needed for a little sweetness to the mild coconut flavor.
