Legim or Haitian Légume is a traditional Haitian dish in the form of a stew. It is composed of simmered beef and a wide variety of vegetables. It can also contain fish instead of meat, or even be simply prepared with vegetables for a vegetarian version. It is usually eaten with white rice or diri kolé (red beans and rice), also known as national rice. The large quantity of varied vegetables it contains makes this stew light and economical, especially when feeding the whole family. Legim is also excellent for health. Even though the preparation may seem a bit long, the simmering time of the stew is the most important, and just needs to be checked from time to time during the cooking.
