Bougatsa is a typical Greek pastry made from filo pastry and garnished with a type of custard made with semolina and vanilla. The cream itself is made up of milk, butter, sugar, eggs and fine semolina. In Greece, bougatsa can also be made with different types of savory fillings, such as cheese, vegetables or meat. According to Greek tradition, bougatsa is prepared for breakfast, and served with coffee. It is baked in a large pie dish then cut into small squares and sprinkled with icing sugar and cinnamon. Bougatsa is a Greek specialty of Byzantine origin. It is a very old recipe, which would have originated in Asia Minor in Constantinople when the city still belonged to the Greeks before its fall in 1453, when it passed into the hands of the Turks.
