Morcilla with onion is a rich sausage with a smoky flavor. The onion version is typical of the mountainous region of Asturias in the north. Morcilla adds blood sausage adds flavor to hearty stews and it is an equally tasty appetizer - either grilled and served with a mixed salad, or sliced and fried as an accompaniment to eggs.
