Besso: Seasoned Barley Besso is popularly consumed as a whole grain flour for porridge or gruel. It is the primary ingredient used to make chikko (a thick, buttery, chocolate-like paste made of barley flour, nitter kibbe and spices) as well as chibito (a lighter finger snack version of chiko made of barley flour, berbere, butter and water). Barley flour is also used to make gebs atmitt: a warm gruel beverage similar to ajja.
